    Rice & Veggies

    Ingredients:

    • 1 cup brown rice
    • 1/4 cup lentils
    • 1/4 cup split peas
    • 1/4 cup barley
    • 1/4 cup couscous
    • 1/4 cup frozen corn
    • 1/4 cup frozen peas
    • Season with hot pepper flakes.

    Directions:

    Add first four ingredients to 1 3/4 cups of water. Microwave on high for 30 mins. Add remaining ingredients. For variations: add brocolli, carrots, cooked beans, any kind, or any veggie you have on hand. This mix can be frozen and  taken out ahead of time to thaw.
