Birdie Bean Mix

Ingredients:
3 cup mix of the following:

  • Black-eyed peas
  • Green split peas
  • Small white beans
  • Navy beans
  • Yellow split peas
  • Barley beans
  • Lentils

1 tsp. fresh garlic (or garlic powder)
2 cups brown rice
20 oz. mixed vegetables (frozen or fresh - This could include corn, carrots, sweet potatoes, broccoli, squash, etc.)
1 egg (when ready to serve)

Directions:

Mix the beans in a 6 Quart pan and let sit one hour in water. Do not drain.

Add one teaspoon fresh garlic or garlic powder and bring to a boil. Reduce heat and let simmer about 1 1/2 hours (until beans soften). Stir occasionally and add water as needed to the mixture. 

Add brown rice and mixed vegetables. Boil until the vegetables and rice are cooked. Strain and cool. Freeze daily servings in separate bags; defrost as needed.

Add one mashed hard boiled egg (with shell) to the room-temperature mixture before serving.
